How to prepare Japanese tea

Mecha (fine buds tea), Konacha (powder tea)

Pour using a tea strainer as the tea leaves are fine.

For fine bud tea and powdered tea, it is preferable to use a tea strainer so that the tea leaves do not enter the bowl. As a guide, the amount of tea leaves is 2 grams per-person and the amount of hot water is 130 ml (per-person). The infusion time is about 30 seconds for powdered tea and about 40 seconds for bud tea because tea leaves take longer to open.

STEP 1

Pour the hot water into the teapot and teacups to pre-warm.

STEP 2

Discard the hot water from the teapot, put an adequate amount of tea leaves for the number of people to be served into the teapot, pour boiling hot water into the teapot and wait for 30 seconds.

STEP 3

Discard the hot water from the teacups, use a tea strainer to serve.

In the case of Konacha, a powdered tea, you can also serve by putting tea leave powder in a tea strainer and serve straight into the teacups.
