How to prepare Black tea

Straight black tea

Enjoy color, aroma and taste of each tea leaf type

There are various kinds of tea leaves for black tea such as Darjeeling, Dooars, Nuwara Eliya, Keemun, Kenya, Uba, and Lapsang Souchog, among others. The best way to brew and serve in order to understand the individuality of each type, is to brew and serve as straight tea. The amount of tea leaves to use is 1 teaspoon per 1 teacup per-person. The leaching time varies depending on the grade of tea leaves, for example, about 5 minutes for Orange Peco, about 3 minutes for Broken Orange Peko, or about 2 minutes for Broken Orange Peko Fannings.

STEP 1

Pour boiling the hot water into the teapot and the cups to pre-warm.

STEP 2

Discard the hot water from the teapot, put the appropriate number of scoops of tea leaves per-person, plus one extra, into the teapot..

STEP 3

Pour the amount of hot water appropriate for the number of servings into the teapot.

STEP 4

Cover the teapot and steam according to the grade of tea leaves. Covering the teapot with a tea cosy causes the teapot to cool more slowly.

STEP 5

Turn the teapot lightly to mix the tea and pour the tea into the cups while straining the tea leaves using a tea strainer.
