How to prepare Black tea

Ceylon-style tea with milk

After tea leaves are completely open, add milk.

Ceylon-style tea with milk is made by boiling tea leaves with milk. Tea leaves do not open when boiled in milk alone, so boil the tea until the tea leaves are completely open using an amount of water equivalent to 40 percent of the water needed for each serving, multiplied by the number of servings. Then add the milk of your choice and cook. The approximate amount of milk to water is 4 parts water to 6 parts milk. Be careful not to cook too much.

STEP 1

Put water measured for the number of people (40% of the per-person serving size) in the teapot.

STEP 2

Put tea leaves appropriate for the number of people and one extra scoop into the teapot.

STEP 3

Heat on a strong flame. Once the tea leaves are completely open, add milk.

STEP 4

Stop the flame once a fine foam starts to appear.

STEP 5

Strain using tea strainer as you pour the tea into the teacups.
