ŸWhat is drop tea (sizuku cha)?
You can feel the Japanese traditional tea culture with drinking drop tea and take the whole ingredients in tea at once. Rolling a drop of highest-quality green tea on a tongue, you can enjoy a gorgeous and relaxed taste with it. Try to taste the sweet and deep flavor of the ingredients in teanin fully, sipping the last drop of tea. Shizuku cha shows the new style of drinking.
Ingredients (1 serving)/
4g highest-quality green tea
100 cc about 40-degree Ÿ hot water proper quantity sweets
Methods/(1) Pour 20cc hot water into teacup with a lid (only for teacup required) into 4g tea leaves slowly, and close tea set with a lid, wait for 2 minutes.
(2) Slide a lid of the teacup which put on the left hand slowly to the other side with the right hand, picking a knob of teacup with looking upward, and sip a drop of highest-quality green tea (gyokuro no sizuku) innocently.
(3) Open a lid gently, and pour another 20 cc hot water into the teacup, and add the second drops. Third drops are followed. After that, you can enjoy it like green tea (sen cha) with the hot water at 80 or 90 degrees.

Tea plays an important role in supplying the nutrition, satisfying the taste, arranging the body, and also refreshing the mind. These four functions of tea are very valuable one.
Teanin which is the important part of tea has the great effect to resolve the stress of the people suffering the mental and body disorder. In addition, its fresh color and profound fragrance make the people very comfortable.
It has been said that tea was the drink only for the adult people. However, from the young to the old generation, everybody knows a PET bottle drink these days. It works as not only refreshing beverage but also relieving thirsty. That is why we called the green tea "an effective medicine to the mind".


To enjoy the fresh fragrance of tea in cooking, it is recommended to make smoked fish with tea. No special tools are required to make smoked fish.
Only the wok and a lid in your kitchen, and a net are also needed. It is preferable for tea leaves to use coarse tea (ban cha) or roasted tea (houji cha). That's all. Shishamo smelt is the proper ingredient for tea smoke. Everybody makes it easily, let's try it.

10 smelt
1/2 Cup coarse tea or roasted tea
3 tablespoon granulated sugar
1 tomato
Each proper quantity: sunny lettuce and lemon
Methods/(1) Prepare a pan with a lid or a wok with a lid; cover the inside of a pan and a lid with aluminum foil tightly. Cover the bottom of a pan with it too.
(2) Add green tea and granulated sugar to it, lay a wire net as floating, and arrange shishamo smelt on it.
(3) Close a lid tightly and cook it over the heat. A couple of minutes later, it gets smoked; lower the heat and another 15 minutes will be needed to smoke further. Finally, it will become beautiful amber color.
(4) Add a tomato and sunny lettuce, lemon and serve it.

Roasted tea reminds us of a good fragrance. It is made from tea leaves which are parched on the fire at high degree, and then, fragrance comes out. Using it for a smoked dish, we can enjoy its fragrance fully. Once cooking over the heat, fragrant smoke peculiar to green tea comes out. Blending it with the other ingredients, you can taste its flavor more. Though the Japanese has not been accustomed to the strong perfume, the fragrance of roasted tea is familiar to the fragrance of roasted tea.
An important thing to mention about this menu is to combine tea with granulated sugar. So sweet and fragrant smoke is extracted further, and the ingredients get dark red color.
