According
to the green tea ceremony ("sen
cha do"), chill green tea
which is brewed stronger taste than
usual with ice cubes and make tea
drops. Pour it into a bowl swiftly.
This is called "kori demae".
(This is normally called "hira
demae" in the tea ceremony.)
This dish is simple modification
of "otemae" that
means the process of making green
tea. You should mention the fresh
color and feel the effect to satisfy
your thirsty. Depending on
the quality of water, the aroma
and the flavor of tea will be varied.
When the tap water is used, it needs
attentive cookery to use the skim
of the water which is kept in a
pot overnight. Furthermore, if it
takes long time to chill, the color
of hot green tea would be changed.
It is necessary to chill it swiftly.
Using tea bag only for water use,
you can cook real cold tea ("rei
cha") though it takes a
long time. Spaghetti cooking,
which has so lightly taste with
olive oil, leads to overeat frequently.
If the tea leaves is used for the
cookery and served with green tea,
the effect in green tea will recover
the indigestion in the stomach. |

| Ingredients
of iced green tea
| · | 10-15g
(1/3 oz-1/2 oz) tea leaves |

 | To
prepare all the ingredients:
Add salt to ample water, cook slightly
harden-boiled spaghetti. Cut boiled
octopus and tomato into bite-sized
pieces. |

sauté:
Place olive oil and sliced garlic
in a pan, sauté over low
heat slowly until it becomes aromatic.
Add champignon and oyster mushroom
and sauté well. Bring octopus
and sauté briefly. |

mix spaghetti with other ingredients:
Add boiled spaghetti and tomato
to a pan, season with salt, pepper,
soy sauce swiftly. |

sprinkle with tea leaves:
Sprinkle with tea leaves (or uncooked
tea leaves), stir softly and serve.

Preparing
iced green tea |
| Instruction
1 | Add
10-15g (standard) tea leaves to
1 liter water. Chill in refrigerator
for 1-2 hours and make green tea.
Pour it into glass with ice cubes.
Otherwise, tea bag , which is brewed
in water, sold at shop can also
be used to make it simple. |
