Today, buckwheat noodles (cha soba) is treated as one of souvenirs. However, during the Edo period, soba restaurant that has been usually situated on riverside was the social place for the ordinary people. Hot water (shira yu) or substitute tea (daiyou cha) were taken in domestic area. The price of tea was too high to be served at home. Needless to say, they had no chance to have cha soba. Then, I managed to cook cha soba in different style to fit for the young people's taste.
This dish is made from noodles of "modern yaki"(modernized baking style). It contains a lot of cha soba in place of various ingredients to make substantial meal. Instead of using sauce, dipping soup is used to taste slightly and healthy.
Score tea leaves of freshly drawn tea, mix with eggs, and then okonomi yaki which has good aroma and different taste is cooked.

Ingredients (4 servings)
·2 buckwheat noodles with tea (cha soba)
·100g (3 1/2 oz) cabbage
batter for "As-You-Like-It" pancake
·100g (3 1/3 oz) flour
·1 egg
·1/2 water
· flaked dried bonito (optional)
·laver (optional)
·preparing powdered tea or cooking tea (optional)

Dipping sauce
·1 1/2 cup primary bonito stock (dashi)
·1 tablespoon thin soy sauce
·salt
·30g sugar
·3 tablespoons mirin
Condiments
·white onion (optional)
·grated white radish
·citron (yuzu) pepper
·seven-spice pepper

To boil buckwheat noodles:
Boil buckwheat noodles, wash in cold water quickly and drain.

To prepare all the ingredients:
Cut buckwheat noodles into bite-sized pieces, cut cabbage into rectangle pieces. Add egg and water to flour of okonomi yaki, mix well. Add seasoning to dipping soup and bring to a boil.
To mix ingredients with batter:
Mix cabbage with buckwheat noodles properly divided for one, and shape.
To bake okonomi yaki:
Heat oil on hot plate, pour (3) and shape in 10cm length, put a lid on it and bake both sides well.
To serve:
After baked, sprinkle with bonito flakes, laver, preparing green tea, and pour dipping soup to taste. Condiments can also be used to taste, if desired.
