The cooking in western style has been popular among young people. Using a various ingredients peculiar to Japan such as soy sauce, mentaiko (Alaska pollack roe which is specialty of Hakata in Kyusyu), laver, uni (seasoned sea urchin egg), the original menu of the western style cooking obtained the popularity. A continuation of its popularity may depend on this menu.
I tried to apply green tea to western cooking. Sprinkling with a tip of tea leaves, the herb will be effective in our body. One of the sharacteristics is that a combination of buttle, milk, and proccessed food such as whipped cream is well-matched. Using it as a decoration of the dish, it will create a rich atmosphere at table. Elegant aroma, beautiful color, and rich flavor are served together. Green glatin uses these features contained in tea, it makes oily food to light taste, and its green color is highly effective to relax. You can taste and enjoy with this delicious dish.



Ingredients (4 servings)
·200g (7 oz) shrimps
·100g (3 1/2 oz) scallop or oyster
·3 tablespoons minced onion
·100g (3 1/2 oz) shiitake mashroom
·2 tablespoons white wine
·1 tablespoon butter
·a pinch of salt and pepper
green sauce
·2 tablespoons butter
·2 tablespoons flour
·2 cups milk
·2 teaspoons matcha
·salt and pepper
·(optional) grated cheese, bread crumps, cooking tea

To steam and boil all the ingredients:
Sauté onion, shrimps which is devined and shelled, shells. Cut mushrooms into bite-sized pieces and sauté with butter, sprinkle with white wine, steam and boil.

To make green sauce:
Melt butter in frying pan, sauté flour carefully (as the same way to make white sauce). When the surface smoothed, add milk, and boil until the sauce is gone. Add matcha mixture, season with salt, pepper, and soup of (1).
To arrange all the ingredients:
Place (1) on a baking dish (casserole) spread with butter, pour ample sauce of (2), sprinkle with grated cheese and bread crumbs.
To bake in oven:
Bake in oven at high temperature for about 15 minutes until brown, sprinkle with eating green tea to serve.
