Reportedly
Bote-Bote tea had been taken
to eat with a little rice, or as
a sanitary food at the time of famine
until the end of the Meiji era.
There is a lot of explanation about
its origin. One is that ordinary
people influenced by a feudal lord
Matsudaira Harusato,
who was called Fumai lord
in tea ceremony, and popularized
it among them. The other is
that people produced this tea against
matcha taken only in high
society culture. Futhermore, labors,
who had worked in Tatara
industry, Tatara was Japanese
special technique to product iron
in Oku Izumo area from the
ancient time, produced this tea
to relieve their thirsty during
the working time at high temperature
to keep one's body healthy from
lacking of appetite. Depending
on their social status, each case
has its own character. However,
the common feature is the way to
combine rice or one's favorite food
with tea. Though the yu zuke
(poured into boiled water) is believed
to be the origin of the ocha
zuke (green tea poured over
a bowl of rice), I assume that the

 | The
origin of Bote-Bote tea:
This beverage is one of the old
customs which is inherited in Matsue
city area of Shimane prefecture.
When the blossoms of tea flower
come out in every autumn, it was
cut and dried behind the sun, cut
into 10cm length and reserved.
A several flowers of it is combined
with tea leaves roasted with round
earthenware platter (höraku),
draw up and bring it into large,
deep bottomed Wu-chou style teacup
that is a special product in Matsue
area. Boil up and stew with large
fine tea whisk, add boiled beans,
sometimes rice or pass it from hand
to hand over drink. |

prepare drops of Bote-Bote
tea:
Add Bote-Bote tea and flowers
to ample boiled water, or put into
large size tea pottery. |

prepare all the ingredients:
Cut tsuda kabu, nuka zuke,
aona zuke into small pieces.
Prepare ni daizu, azuki.

Arrange your favorite ingredients,
pour hot Bote-Bote tea into
