| As
ingredients of the tofu cooking,
prepare 600g (21oz) green tea leaves
in 10 blocks tofu. It is better
to use good aroma of the roasted
tea. Remove the coarse surface of
tofu and cut into dice cubes. When
the tea boiled, bring tofu into
it and boil well. And the surface
of tofu becomes brown, transfer
to hot water. Arrange on plates
and pour sesame miso over. |

Greentea-boiled
tofu, the so-called "Cha
ya tofu" in Japanese, can
keep fresh itself by washing tofu
in green tea soup, because the sterilizing
power in green tea is so high.
When there was no refrigerator in
a house, people managed to cook
like this. As cooking boiled tofu,
you can cook it full-bodied taste
while it is lightly seasoned, and
not to fall apart during the cooking.
It is recommended to treat greentea-boiled
tofu as a useful dishes warmed in
hot water, the so-called "Yudofu".
In the cooking book ("Ryouri
chinmi syu"), the way of
cooking sesame miso appeared
in a number of places. To combine
such a little and nutritious sesame
with miso made of soy beans
is really delicious. In addition
to this combination, miso
mixed with sesame which has slightly
better taste is cooked with making
better use of the costly matcha. |

 | To
make sesame miso:
Bring white miso into a pan.
Add dashi, mirin,
sake, sugar and place on
the heat. If a pan is placed on
the heat directly, cook it over
low heat. Stir it carefully without
burning. When thickened, remove
from the heat, and add white sesame. |

make sesame miso boiled in
green tea:
Cool down sesame miso of
(1), add matcha (powdered
tea), and stir. |

To
make drops of roasted tea:
Roast tea leaves to be aromatic.
Bring into hot water, and make roasted
green tea. |  |

To
boil tofu:
Boil up tea soup of (3) add tofu
which is cut into dice cubes, and
boil for a while. When tofu browns,
add hot water. |  |

arrange on plates:
Arrange tofu boiled in green tea
on a plate. Pour miso mixed
with sesame over it, and add condiments
such as bamboo shoot boiled in dashi
and serve. |
