| The
aroma of three types of tea and
its taste in your mouth can be enjoyed.Though
the strength of tea depends on your
liking, it is recommended that the
strength of sen cha should
be stronger, otherwise powdered
green tea should be used. To avoid
the bitterness, you should be careful
about the temparature of hot water.
The high temparature of hot water
which is used to melt matcha
will change the color of tea leaves.
On the contrary hoji cha
should be served with hot water
to give off the aroma. And chill
it at 70ºC to blend with gelatin.
If gelatin contains moderate water
and slightiy harden, you can dish
it up attractively. |

make green tea jelly with three
colors:
Sprinkle the powdered gelatin over
water and stir. Soak into water
and melt with boiling water.

make matcha jelly, pour hot water
into matcha, stir with tea whisk
(cha sen), combine it with
gelatin, pour into a mold. Chill
and harden. |

make hoji cha jelly Combine
tea drops with gelatin, pour into
a mold. Chill and harden. |

make sen cha jelly Combine
both green tea leaves and tea drops,
which is extracted from hot water,
with gelatin, and pour into a mold.

To
make a small white ball dumplings:
While pouring water into rice-flour,
knead white ball dumplings in earlobe
softness, round it in a small size
and boil. When floating up to the
surface, transfer to the cold water

make syrup:
Place sugar and water on a pan,
boil quickly, and chill well. |

your favorite fruits into bite-sized
pieces |

| To
cut jelly:
When all the
ingredients cooled down, cut it
into 2cm square. |

dish up on a plate:
Dish up green tea jelly with three
colors and rice-flour dumplings
on a plate, add fruits, pour cold
syrup and serve. |
